How to look after your wedding cake in a heatwave

If you're anything like me, the food will be one of the most important parts of your wedding day (after actually getting married, of course!!). You may spend hours choosing menus and deliberating over cake flavours - do I prefer raspberry and vanilla or classic Victoria?! You finally settle on a 3 tiered cake (all different flavours as you just couldn't pick!) and set about planning the rest of your wedding. Nearer the big day, you might start religiously checking the weather to see if you're going to have a beautiful sunny day or if you need to make a last minute order of umbrellas; but what you probably haven't thought of is how is your cake going to survive in the heat?!!

Luckily, we have Ashlee from Bite Me Bakes to pass on her top tips to ensure that your wedding cake looks exactly how you imagined it on your wedding day...

Firstly - Consider having ganache instead of buttercream. There is a slight difference in the taste between the two; but Ashlee even says that her clients actually prefer the taste of ganache over buttercream. Especially when used as a thin outer coating on the cake, you can barely notice the difference between the two.

However, there is a considerable difference in the structure and stability of the two. Ganache is much more stable than buttercream and lasts a great deal longer in warmer environments. It's for this very important reason that cake artists prefer to use ganache instead of buttercream, especially for Summer weddings.

The next thing to consider is where you are going to be displaying your cake at your wedding. Think about the weather when you are choosing where to set up your wedding cake - if it's a really sunny day you will want to ensure that your cake is away from a window as the glass will magnify the heat. It's always a good idea to check with your venue where the sun will be throughout the day. Quite often your cake maker will be delivering the cake to your venue in the morning, but the position of the sun will change throughout the day. You want to make sure that your cake is out of direct sunlight for the majority of your wedding day. If your venue has air-conditioning, make sure that they put it on; if your venue doesn't, or if you're holding your wedding reception in a marquee, then Ashlee recommends that you have a fan on standby to blow cool air around the cake whilst it's sitting on display. Be careful about having the fan pointing directly at the cake, or having it turned up too high, as you won't want to blow any flowers or other decorations off!

Think carefully about moving the cake. Your cake won't necessarily be in one location for the duration of your wedding reception; you might have to store it in a kitchen before it goes on display. The venue staff may have to move it out to where it will be displayed after the cake maker has left. In this instance, Ashlee encourages you to make sure that they plan exactly how they're going to do this to ensure that the cake remains intact. In warmer temperatures the cake may become slightly less stable after it has been left out for a while, so you need to move it very carefully. Ashlee points out that the cake is no longer the responsibility of the cake artist once they have left; therefore the venue/couple/or caterers need to ensure that they look after it properly, keeping it in the conditions that it was left in - including the room temperature. I would recommend either asking your venue or your caterers to cut up the cake into servings, instead of a family member, as they will have experience of doing this at previous weddings.

I'm sure that these top tips from Ashlee will be useful when it comes to planning the cake for your own Summer wedding - just remember to think about the position of the sun and the temperature at your venue!
